Spinach & Cilantro Pesto

2 handfuls of fresh spinach
1/2 cup fresh cilantro
1 garlic clove
1/2 cup raw cashews
1/4 cup olive oil
Salt & Pepper to taste

Wash all greens, peel the garlic clove, and blend everything together in a small food processor adding olive oil until you reach desired consistency.

We dipped with our “farm to table” eggplant. I thinly sliced it and roasted at 425 for about 20 min. The next day I munched on this DELICIOUS pesto with baked pitas.

Can’t wait to get back to our beach house! This is a little peak and I promise to post more pics in the next few weeks. Just have a few more finishing touches:)

nautical cookie favors

Let me start this off by saying that I was cursing the whole time making these cookies. My main issue was that I decided to make shortbread cookies instead of sugar cookies. I love shortbread, but they are not a hard enough cookie to make for this party favor.

This past weekend, I co-hosted a baby shower for my lovely bffs, the Vitals. They are expecting their first little one this July! One of my duties was to take care of favors. With a nautical theme in mind, I decided to make sailboat and crab frosted cookies.

Cookie Favor Steps:

I purchased a sailboat and crab cookie cutter from here and here.

The day before the event i baked the cookies using this Shortbread Cookie Recipe.

After they cooled completely, I decorated the cookies with this Icing recipe (which i had to make 3x as much as for these cookies)

I packed each one in a clear cellophane bag, yellow raffia, and red|white baker’s twine.

In the end … they turned out pretty cute and yummy!
